  • 1/2 cup walnuts
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon cayenne
  • 1 tablespoon chopped flat-leaf parsley
  • 1/2 stick unsalted butter
  • 1/2 teaspoon fresh lemon juice
  • 8 lamb rib or loin chops (3/4 inch thick; 2 pounds)
