Ingredients
- 4 slices sandwich or crusty bread, lightly toasted
- 1/2 cup goat cheese, room temperature
- 2 medium heirloom tomatoes (about 1 pound), cored and sliced
- 10 kalamata olives, pitted and sliced
- 1 handful fresh basil leaves, sliced into thin ribbons
- Extra virgin olive oil
- Salt and freshly ground black pepper, to tast
