Smoked Paprika and Oregano Roast Chicken
Ingredients
- 1 (3 1/2 to 4 pound) chicken
- 2 tablespoons canola, grapeseed, or peanut oil
- Juice of 2 limes (about 2 tablespoons)
- 1/4 cup low-sodium soy sauce
- 2 tablespoons ground smoked paprika
- 1 1/2 tablespoon ground cumin
- 6 garlic cloves, grated
- 1 tablespoon, plus 1 teaspoon kosher salt
- 2 tablespoon canola, grapeseed, or peanut oil, divided
- 2 medium yellow onions, sliced into 1-inch rings
- 1 1/2 pounds assorted fingerling potatoes, halved
- 2 tablespoons finely chopped fresh oregano
